Make the pomegranate molasses: In a small saucepan, combine the pomegranate juice, sugar, and lemon juice. Be careful not to burn the syrup. Remove the pot from the heat and allow the pomegranate molasses to cool completely before using. Make the shake: Add a few spoonful’s of sugar to a small plate. Dip the rim of the champagne glass into the pomegranate molasses and then into the sugar to coat.

Add ½ tablespoon of pomegranate molasses to the bottom of the glass, and then pour over the lemon juice and pomegranate juice. Top up the rest of the dough with sparkling wine. Float the pomegranate seeds on top of the cocktail and garnish with a sprig of rosemary.

  • 2 cups of pomegranate juice
  • 1 tablespoon lime juice
  • ½ cup sugar or as needed
  • 4 cups spirits or sparkling water
  • 2 cups of ice cubes
  • 1 pinch of salt

  • Mix the lime, honey and rosemary together until the rosemary releases its fragrance. Pour the wine, cherry schnapps and pomegranate juice into the jug.

Microwave on high until heated through, about 2 minutes; stir until the sugar dissolves. Stir in vodka, lime juice and bitters; chill for 20 minutes. Gently stir in the rosé. Serve in champagne glasses; top each with 4 to 5 pomegranate scallions.
